At Char & Co, we've built our kitchen around one simple belief: Great barbecue can't be rushed.
Every smoked dish begins in our traditional offset smoker, where real hardwood, clean smoke and steady heat slowly bring out flavours that simply can't be hurried.
It's a slower way to cook.

Built Different.
Unlike conventional grills, an offset smoker keeps the fire separate from the food, allowing clean heat and hardwood smoke to circulate gently around every cut for hours.
It's a slower, more demanding way to cook, but that's exactly what gives our barbecue its depth, tenderness and unmistakable wood-smoked flavour.
Every great barbecue starts with a well-managed fire. We carefully build and maintain a steady charcoal fire, feeding it with hardwood throughout the cook to create clean, thin blue smoke — the kind that enhances flavour without overpowering it.
